AUTHENTIC PAYA CURRY RECIPE

  • Heat oil or Desi ghee in a large pot over medium heat.
  • Add the finely sliced onions and sauté until golden brown.
  • Stir in the garlic and ginger pastes, cooking for another minute.
  • Add the cleaned cow, goat or sheep trotters and cook until they are browned on all sides.
  • Mix in the Himalayan Chef Paya Masala, ensuring the trotters are well-coated.
  • Add the chopped tomatoes and cook until they are soft and blended into the mixture.
  • Stir in the yogurt and cook for a few minutes until it is well blended with the trotters.
  • Add enough water to cover the trotters, bring to a boil, then reduce heat and simmer. Cover and cook on low heat for 4-6 hours, or until the trotters are tender and the broth is rich and flavorful.
  • Season with Himalayan Chef Pink Salt to taste.
  • Garnish with fresh coriander and ginger slices before serving.
