Grilled Corn Pesto Macaroni Salad
Spring season has just arrived!! It is considered to be the picnic season as the sky is perfect azure and the sun is very pleasant. It’s time to grab your wicker basket, wear some red checked clothes and find a clean patch of grass to enjoy the delicious picnic foods with your family and friends.
Grilled corn pesto macaroni salad is considered to be one of the best picnic pasta salads. It could be a perfect side for your barbecue party too. It’s a super easy but very delightful recipe to make in no time for a perfect picnic.
Ingredients for 4 servings:
- 4 ears corn (shucked)
- ½ cups pine nuts (toasted)
- 1 cup Parmesan cheese (grated)
- 4 scallions (white and light green parts, sliced)
- 1 lb. macaroni
- Himalayan pink salt (as you like)
- 1 cup extra virgin oil (good quality)
- ½ cup mayonnaise
Transfer half of the corn, scallions and all the pine nuts and Parmesan cheese to a blender. Blend lightly to break the ingredients. After that, start adding olive oil in a slow drizzle and keep on blending until you get a coarse paste. Take out the paste from blender and shift to a large bowl. Add the remaining ingredients and mix well. Sprinkle Pink salt and black pepper to enhance the flavor of your dish. Cook macaroni according to the instructions given on the package. Drain well and add to the bowl with corn pesto and mayonnaise. Toss well and refrigerate until ready to serve.
